Make custard and soak bread
In a shallow wide bowl or pie dish whisk together 3 eggs, 3 tablespoons whole milk, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1 teaspoon granulated sugar and a pinch of salt until homogeneous and slightly frothy. Briefly dip each slice of bread into the mixture, letting it soak 10–15 seconds per side for thick-sliced brioche (longer for very thick or stale slices), ensuring it is saturated but not falling apart. Place soaked slices on a wire rack while you heat the pan.
Cook French toast
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon of the butter and let it melt and foam. Lay 2 soaked slices into the pan (do not crowd). Cook 2–3 minutes on the first side until golden brown and set, then flip and add remaining 1 tablespoon butter around the edges. Cook another 1.5–2 minutes until the second side is golden and cooked through. Transfer to a warm plate and keep loosely covered in a low oven (about 200°F / 95°C) while you cook the remaining slices.
Finish and serve
Stack two slices per serving on plates. Dust with 1 teaspoon powdered sugar, scatter optional fresh berries if using, and drizzle 2 tablespoons maple syrup over each serving (reserve extra syrup at the table).

Prepare eggs any style
Choose style: for scrambled, beat 2 eggs with 1/8 teaspoon black pepper and 1/8 teaspoon salt. Heat a small nonstick skillet over medium-low, add 1 teaspoon butter or oil, pour eggs in and stir gently until softly set, about 1–2 minutes; remove while still slightly glossy. For fried (any style such as sunny-side, over-easy), heat skillet over medium, add butter, crack eggs into pan and cook to desired doneness: 2–3 minutes for sunny-side, flip and cook additional 20–45 seconds for over-easy. Keep warm until plating.

Cook turkey bacon
For turkey bacon slices: heat a skillet over medium and add the turkey bacon in a single layer. Cook 3–4 minutes per side until browned and crisp to your liking. Drain on paper towels and keep warm.
Cook turkey sausage links
For turkey sausage links: place links in a cold skillet, turn heat to medium, and brown evenly by turning frequently for 8–10 minutes until internal temperature reaches 165°F (74°C). If links are thick, you can finish in a 375°F (190°C) oven for 5–7 minutes. Drain and keep warm.
Cook beef bacon
For beef bacon slices: cook in a skillet over medium for 3–5 minutes per side until crisp and browned. Drain on paper towels and keep warm.
