Pancake batter

Method

Pancake batter

1

Combine dry ingredients

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until evenly combined.

2

Combine wet ingredients

In a separate bowl or large measuring cup, whisk the milk, egg, melted butter, and vanilla extract until uniform.

3

Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon just until combined; small lumps are okay. Do not overmix or the pancakes will be tough.

4

Fold the chocolate chips into the batter until evenly distributed. Let the batter rest 5 minutes while you preheat the pan.

Cooking pancakes

5

Heat a large nonstick skillet or griddle over medium heat. Brush or swirl about 1 teaspoon of the butter across the surface for the first batch; reapply a little butter between batches as needed.

6

For each pancake, pour about 1/4 cup of batter onto the hot surface. Cook until bubbles form on the surface and edges look set, about 2–3 minutes.

7

Flip and cook the second side until golden and the pancake is cooked through, about 1–2 minutes more. Keep cooked pancakes warm in a low oven (90–100°C / 200°F) on a baking sheet while you finish the rest.

Whipped cream

8

Chill a medium mixing bowl and the beaters (optional) for 5 minutes in the fridge to help the cream whip faster.

9

Pour the heavy cream into the chilled bowl, add powdered sugar and 1/2 teaspoon vanilla extract, and whip with a hand mixer or stand mixer on medium-high until soft peaks form (about 2–3 minutes). Do not overwhip—stop when peaks hold but are still billowy.

Assembly & serving

10

Warm the Nutella slightly to make it spreadable: microwave in a small bowl for 10–20 seconds, stirring after 10 seconds, or place the jar in a bowl of warm water for a few minutes.

11

Stack 3–4 pancakes per serving on plates. Spread about 1 to 1.5 tablespoons Nutella between pancakes or spread a thin layer on top of each pancake as you stack.

12

Top the stack with 2–3 tablespoons of whipped cream, then arrange 4–6 sliced strawberries over the cream. Drizzle a little maple syrup if desired.

13

Finish with a small spoonful of warm Nutella on top, and sprinkle toasted chopped hazelnuts and extra chocolate chips if using.

14

Serve immediately while warm.
