Bring a skillet or toaster to medium heat. Lightly butter or oil both sides of the multigrain bread. Toast slices in the skillet for 2–3 minutes per side until golden and crisp, or use a toaster until toasted. Keep warm.

Guacamole

Halve the avocado, remove pit, and scoop flesh into a medium bowl. Mash with a fork until mostly smooth with a few small chunks for texture.

Stir in lime juice to prevent browning and to brighten flavor.

Fold in finely minced red onion, chopped cilantro, minced jalapeño, quartered cherry tomatoes (if using), sea salt, and black pepper. Taste and adjust seasoning — add more lime or salt if desired. Set aside at room temperature.

Turkey bacon or beef bacon (pan-fry)

Heat a nonstick skillet over medium. Lay bacon strips in a single layer and cook 3–4 minutes per side for turkey bacon (4–6 minutes per side for beef bacon) until browned and crisped to your liking. Transfer to a paper towel–lined plate to drain.

Turkey sausage patties (pan-fry)

If using turkey sausage patties, heat a skillet over medium and add a teaspoon of oil if the pan is dry. Cook patties 4–5 minutes per side, until internal temperature reaches 165°F (74°C) and they are golden-brown. Transfer to a plate and keep warm.

Eggs — your way (sunny-side up / over-easy / scrambled)

Heat a small nonstick skillet over medium-low and add 1 tsp butter or oil. For sunny-side up: crack eggs into the pan, cook gently 2–3 minutes until whites set but yolks still runny; cover 30–60 seconds to help set whites if necessary. For over-easy: cook sunny-side until whites mostly set, flip gently and cook 15–30 seconds more. For scrambled: whisk eggs with salt and pepper, pour into pan, stir gently until just set, about 1–2 minutes. Season with 1/4 tsp salt and 1/4 tsp pepper.

Assembly & Garnish

Place the two toasted multigrain slices on a plate. Spoon an even layer of guacamole over each slice (about half the guac per slice).

Top each slice with your chosen protein: arrange turkey or beef bacon strips across the toast, or place a turkey sausage patty atop one or both slices as desired.

Carefully place the eggs on top of the protein-covered toast (one egg per slice or both eggs over one slice if preferred).

Finish with microgreens or arugula, a light sprinkle of crushed red pepper flakes, and an extra squeeze of lime. Serve immediately.
