Method
Crêpe batter
Measure and combine dry
In a medium bowl, whisk together the all-purpose flour, granulated sugar, and a pinch of salt until evenly blended.
Make a smooth batter
Gradually add the dry ingredients to the wet while whisking (or pour wet into blender with dry), whisking until smooth and free of lumps. The batter should be thin and pourable. If lumps persist, blend briefly. Let the batter rest 20–30 minutes at room temperature (or refrigerate up to 2 hours) to relax the gluten and reduce bubbles.
Sweet cream filling
Soften and mix
In a small bowl, beat the softened cream cheese and mascarpone (or sour cream) with a hand mixer or whisk until smooth and lump-free.
Sweeten and adjust texture
Add the powdered sugar and vanilla extract and continue to beat until combined. If mixture is too thick to spread, add the tablespoon of milk and mix until it reaches a creamy, spreadable consistency. Chill briefly if needed.
Berries & toppings
Prepare berries
Place the sliced strawberries and blueberries in a small bowl. Sprinkle with the optional granulated sugar and lemon juice if using; toss to combine and let macerate 10–15 minutes so juices develop.
Make whipped cream (if not using store-bought)
If making fresh whipped cream, whip 0.5 cups heavy cream with 1 tsp powdered sugar and a drop of vanilla until soft peaks form. Otherwise, measure 0.5 cups prepared whipped cream.
Dusting and finishing
Have 1 tablespoon powdered sugar ready to dust finished crêpes just before serving.
Cook and assemble
Cook crêpes
Stir the rested batter gently. Pour about 1/4 cup batter into the center of the hot pan, immediately lift and tilt the pan while swirling to spread batter thinly and evenly into a round. Cook 45–60 seconds until the edges lift and the underside is lightly golden. Use a thin spatula to flip and cook the other side 15–20 seconds. Transfer cooked crêpe to a plate and repeat with remaining batter, re-buttering the pan as needed. This recipe yields about 6–8 thin crêpes depending on pan size.
Fill crêpes
Lay a warm crêpe flat. Spread about 2 tablespoons of the sweet cream filling in the center, leaving a 1-inch border. Top with a spoonful of macerated strawberries and a few blueberries (about 2–3 tbsp of mixed berries). Fold: fold in half, then fold again into a triangle, or roll up, per preference.
Plate and garnish
Place assembled crêpes on a serving plate. Top with a dollop of whipped cream, additional fresh berries, and dust with powdered sugar immediately before serving.
