Caesar Dressing
Prepare the Salad Base
1. Wash and Chop Romaine
Wash the romaine lettuce thoroughly under cold water. Remove any wilted or damaged leaves. Pat dry with a paper towel and chop into bite-sized pieces.
2. Prepare Croutons
If using store-bought croutons, measure out 1 cup. If making homemade croutons, cube 2 slices of bread, toss with olive oil, garlic powder, salt, and bake at 375°F (190°C) for about 10-12 minutes until golden brown.
3. Grate Parmesan Cheese
Using a box grater, grate 0.5 cup of Parmesan cheese and set aside.
Make the Caesar Dressing
4. Prepare Ingredients
Peel and mince 2 garlic cloves and set aside. Rinse the anchovy fillets and chop them finely.
5. Combine Dressing Ingredients
In a bowl, combine the minced garlic, chopped anchovy fillets, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, and 2 tbsp lemon juice. Mix well.
6. Add Olive Oil
Slowly drizzle in 0.5 cup of olive oil while whisking continuously to emulsify the dressing. Season with 0.5 tsp salt and 0.25 tsp black pepper to taste.
Assemble the Salad
7. Combine Ingredients
In a large salad bowl, add the chopped romaine lettuce, croutons, and grated Parmesan cheese.
8. Dress the Salad
Drizzle the prepared Caesar dressing over the salad. Toss gently to combine until all the ingredients are well coated.
9. Serve
Serve immediately, garnished with additional Parmesan cheese if desired.
