1. Prepare the Meat Mixture

In a large mixing bowl, combine the minced pork shoulder and beef chuck. Add in the diced Applewood smoked bacon, jalapeno peppers, smoked cheddar cheese, kosher salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix thoroughly until all ingredients are well combined.

2. Stuff the Sausages

Rinse the natural hog casings in cold water. Rinse again with water mixed with a bit of vinegar. Fit the casings onto a sausage stuffer and carefully stuff the meat mixture into the casings, being careful not to overstuff. Twist sausages into links of desired length and tie the ends securely.

3. Smoke the Bratwursts

Preheat your smoker to 225°F (107°C) using hardwood embers. Place the sausages in the smoker and smoke for about 2-3 hours, or until they reach an internal temperature of 160°F (71°C).

4. Cool and Serve

Once smoked, remove the bratwursts from the smoker and let them cool slightly before serving. These bratwursts can be enjoyed grilled, pan-fried, or cooked in a hot dog bun with your favorite toppings.
