Chill glass

Place a rocks glass in the freezer for 5–10 minutes or fill it with ice water while you assemble ingredients to ensure the cocktail stays cold without diluting quickly.

Build the drink

Remove the glass from the freezer and discard any ice water. Add 4 cubed pieces of fresh ice to the chilled rocks glass. Pour in 2 oz homemade spiced rum, then add 1 oz butterscotch liqueur.

Top with cream soda

Slowly pour 3 oz chilled cream soda over the back of a spoon or down the side of the glass to maintain some effervescence and a layered look. Give the drink one gentle stir (about 3 slow turns) to integrate the liqueur and rum without losing too much carbonation.

Finish with whipped cream

Using a spoon or a small piping bag, add 2 tbsp of whipped cream on top of the cocktail to form a floating cap. If you prefer a lighter topping, briefly whip cold heavy cream to soft peaks and dollop 2 tbsp.

Garnish and season

Lightly grate about 1 tsp fresh nutmeg over the whipped cream. If using, sprinkle 1/4 tsp flaked sea salt across the cream to enhance butterscotch notes. Add a butterscotch candy on the rim or a toasted marshmallow on a cocktail pick as a sweet garnish.

Serve

Serve immediately with a short spoon or stirrer so the guest can fold the cream into the soda as they sip. Recommend enjoying slowly to appreciate the spiced rum and butterscotch interplay with the creamy soda.
