    Clean mussels

    Rinse the mussels under cold running water. Discard any mussels with cracked shells or that remain open when tapped. Using a small knife or your fingers, debeard any mussels (remove the fibrous beard). Set cleaned mussels in a bowl in the refrigerator while you prepare the aromatics.

    Prepare aromatics

    In a large, wide pot or Dutch oven over medium heat, add 1 tablespoon of the butter. When it melts and starts to foam, add the finely chopped shallots and sauté for 2–3 minutes until softened and translucent but not browned. Add the minced garlic and cook 30–45 seconds until fragrant.

    Build the broth

    Add the remaining 2 tablespoons butter to the pot, then pour in the pilsner beer and the 1 cup water or stock. Stir in thyme (if using), red pepper flakes (if using), salt and pepper. Bring the liquid to a gentle simmer over medium-high heat.

    Steam the mussels

    Add the cleaned mussels to the pot, cover with a tight-fitting lid, and increase heat to maintain a vigorous simmer. Steam for 5–7 minutes, shaking the pot once or twice, until the mussels open. Check after 5 minutes and remove from heat as soon as most mussels have opened. Discard any mussels that remain closed.

    Finish the broth

    Remove the pot from heat. Stir in lemon juice and chopped parsley. Taste the broth and adjust seasoning with additional salt, pepper, or lemon as desired.

Finishing & Serving

    Warm the snowflake rolls: preheat oven to 350°F (175°C). Lightly brush the rolls with the 2 tablespoons melted butter and place them on a baking sheet. Warm in the oven 6–8 minutes until heated through and tops are slightly golden.

    Serve: Transfer mussels and broth to a large shallow bowl (or serve straight from the pot). Sprinkle extra chopped parsley over the mussels. Serve immediately with warm snowflake rolls to dip into the beer-garlic broth. Provide a small bowl for discarded shells if desired.

    Optional finishing touch: For a richer finish, ladle a tablespoon of the buttery broth over each portion and offer lemon wedges at the table.
