Chill and prepare lemons
Place oysters on ice or in refrigerator to keep cold while you work. Cut both lemons in half crosswise; reserve additional slices or wedges for garnish if desired.

Clean oyster shells
Rinse the oyster shells under cold running water and scrub with a stiff brush to remove grit and debris. Keep oysters cold on ice until ready to shuck.

Shuck oysters
Using an oyster knife and a towel or glove for protection, hold the oyster flat-side up. Insert the knife at the hinge and twist gently to pop it open. Slide the knife along the top shell to sever the adductor muscle and remove the top shell. Then slide the knife under the oyster to free it from the bottom shell, leaving the oyster in its half shell with liquor (the natural juice) intact. Transfer each shucked oyster onto a bed of crushed ice on a serving platter to stabilize and keep cold.
Cocktail Sauce

In a small mixing bowl combine 1 cup ketchup, 3 tablespoons prepared horseradish, 1 tablespoon fresh lemon juice, 1 teaspoon Worcestershire sauce, 3 dashes hot sauce, 1 teaspoon sea salt and 1 teaspoon black pepper. Whisk until smooth and taste; adjust horseradish or hot sauce to your desired heat level. Chill in refrigerator for at least 15 minutes to meld flavors. Transfer to a small bowl for service.
Mignonette

In a small bowl combine 1/2 cup red wine vinegar, 2 tablespoons finely minced shallot, 1 teaspoon freshly ground black pepper and 1/2 teaspoon fine sea salt. If the vinegar is very sharp, add 1 tablespoon cold water to mellow. Stir to combine and let rest at least 10–15 minutes at refrigerator temperature to allow the shallot to soften and flavors to marry. Taste and adjust salt or pepper as needed. Keep chilled until serving.

Arrange the crushed ice on a large shallow platter or individual plates to form a stable bed. Nestle each shucked oyster (in its half shell) into the ice so the shell sits level and the oyster liquor remains in place.

Place small bowls of cocktail sauce and mignonette on the platter or alongside. Add lemon halves or wedges for squeezing at the table.
