    Prepare lobster meat

    If using pre-cooked lobster, remove claw and knuckle meat from shells and chop into 1/2-inch pieces. Keep chilled until needed. Reserve any small pieces and juices to fold in at the end.

    Just before serving, warm the chopped lobster gently in a small saucepan with 1 tablespoon of the heavy cream (from the Bisque Base) over low heat for 1–2 minutes — do not boil — to keep tender. Alternatively, warm in the finished bisque for 1 minute per serving.

    Thinly slice chives and set aside for garnish. Place crackers in a small bowl or plate to serve alongside soup.

Bisque Base

    Roast lobster shells (optional — for deeper flavor)

    Preheat oven to 425°F (220°C). Toss lobster shells with 1 tsp neutral oil and spread on a rimmed baking sheet. Roast 12–15 minutes until shells are fragrant and lightly browned. Transfer shells to a large stockpot.

    Sauté aromatics

    In the same large stockpot, melt 3 tablespoons of butter over medium heat. Add finely diced onion, carrot, and celery. Season lightly with a pinch of salt. Sauté, stirring occasionally, until vegetables are soft and translucent, about 6–8 minutes. Add minced garlic and cook 30 seconds until fragrant.

    Build the base

    Stir in tomato paste and cook 1–2 minutes to remove raw flavor. Sprinkle the flour over the vegetables and cook, stirring constantly, 1–2 minutes to form a light roux. Deglaze with the dry white wine, scraping any browned bits from the bottom of the pot, and reduce by half (about 2–3 minutes).

    Simmer with stock

    Add the roasted lobster shells (if used) to the pot along with fish or seafood stock, bay leaf, paprika, salt, and pepper. Bring to a gentle simmer, then reduce heat to low and simmer, partially covered, 25–30 minutes to extract flavor from the shells and meld flavors. If not using shells, simmer 15–20 minutes to combine flavors.

    Strain and finish

    Remove from heat. Carefully strain the broth through a fine-mesh sieve into a clean pot, pressing on solids to extract liquid; discard solids and bay leaf. Return the strained liquid to medium heat. Stir in whole milk and remaining 1 tablespoon butter. Bring just to a gentle simmer.

    Enrich and season

    Whisk in the heavy cream and optional cognac or brandy, then taste and adjust seasoning with additional salt, black pepper, and lemon juice to brighten. Keep the bisque at a low simmer — do not boil once cream is added to avoid curdling.

    Integrate lobster meat

    Fold warmed lobster claw and knuckle meat into the bisque for the final 1–2 minutes to heat through. Reserve a small amount (about 1–2 tablespoons per serving) of lobster meat to place on top of each bowl if you prefer visible chunks.

    Finish with butter (optional)

    For extra silkiness, whisk in the remaining 1 tablespoon of butter off heat until melted and emulsified into the soup.

    Ladle bisque into warmed bowls. Garnish with the reserved lobster meat pieces (if set aside), a sprinkle of sliced chives, and serve with water crackers on the side.
