Orange-Clove Infused Gin

    Prepare peels

    Using a vegetable peeler, remove the zest from 1–2 mandarins or 1 large orange, avoiding the bitter white pith. You want roughly 1 cup loosely packed peel strips.

    Place the peels, 6 whole cloves and 4 allspice berries in a clean, airtight glass jar (at least 16 oz). Pour 2 cups of gin over the aromatics so they are fully submerged.

    Seal the jar and store in a cool, dark place. Shake gently once a day. Taste after 12 hours: the infusion will be lightly scented. For more pronounced mandarin and clove notes, steep 24–48 hours. Do not exceed 72 hours to avoid excessive bitterness.

    When desired flavor is reached, strain the gin through a fine mesh sieve lined with a coffee filter or cheesecloth into a clean bottle. Discard solids. Label and refrigerate the infused gin; it will keep several weeks.

Cocktail

    Chill a coupe or rocks glass by filling with ice water while you build the cocktail.

    Fill a cocktail shaker with ice about two-thirds full.

    Add 2 oz spiced orange-infused gin, 0.75 oz fresh mandarin/orange juice, 0.5 oz fresh lemon juice, 0.5 oz simple syrup and 2 dashes orange bitters to the shaker.

    Shake vigorously for 10–12 seconds until exterior of shaker is frosty and well-chilled. If you prefer a slightly lighter, sparkling 'glow', briefly add 1 oz club soda after shaking and give a gentle stir in the mixing vessel (do not shake soda).

    Dump the ice water from your chilled glass and either double-strain the cocktail into the coupe (for a clean, clear presentation) or pour over fresh large ice in a rocks glass.

Garnish & Finish

    Stud the thin mandarin/orange wheel with a single whole clove near the rind to resemble the 'Grinch' accent. If using edible green glitter or micro herbs, lightly dust or place them on the peel edge for a subtle emerald shimmer.

    Float the garnished wheel on the surface of the cocktail or perch it on the rim. Serve immediately.

    Optional: For a theatrical glow, serve under a small LED tea light under a clear glass cloche for presentation (do not place flame under glass).
