Method
Toast & Base
Warm and butter biscuit
Preheat oven to 160°C (325°F) or use a toaster oven. Split the butter biscuit in half horizontally. Place halves cut-side up on a baking tray and warm for 5 minutes until lightly toasted. Remove and spread 1 tablespoon of unsalted butter evenly over the warm cut sides. Set aside on a plate.
Avocado Topping
Prepare avocado mash
Halve and pit the ripe avocado. Scoop 1/2 avocado flesh into a small bowl. Add 1/2 teaspoon lemon juice, 1/8 teaspoon salt and a small pinch (about 1/16 tsp) black pepper. Mash with a fork to a slightly chunky, child-friendly consistency. Taste and adjust seasoning lightly if needed.
Poached Egg
Bring water to gentle simmer
Pour about 1 liter of water into a small saucepan and bring to a gentle simmer over medium heat (small bubbles, not a rolling boil). Add 1 teaspoon white vinegar to the water — this helps the egg whites set.
Crack and poach the egg
Crack the large egg into a small cup or ramekin. Using a spoon, stir the simmering water to create a gentle whirlpool, then slip the egg from the cup into the center. Let it poach undisturbed for 3 minutes for a soft runny yolk (3.5–4 minutes for slightly firmer yolk). Use a slotted spoon to gently lift the egg and briefly rest it on a paper towel to drain excess water.
Season the egg
Lightly season the poached egg with a tiny pinch of salt if desired.
Finish & Garnish
Assemble Piglet Pack
Place the drained poached egg carefully on top of the mashed avocado on the butter biscuit. Scatter about 1/4 cup microgreens or a couple of baby spinach leaves around or on top for color and mild flavor. Sprinkle a very light dusting (1/8 teaspoon) of mild smoked paprika over the egg and avocado for a gentle smoky note, if using. Adjust salt sparingly for a kid-friendly taste.
Serve with toy
Place the small plastic toy beside the plate (ensure it is clean and suitable for children). Serve immediately while the toast is warm and the egg is at the desired doneness.
