Hot Chocolate Base

Method

Hot Chocolate Base

1

Warm milk and cream

In a medium saucepan, combine 4 cups whole milk and 1 cup heavy cream. Place over medium-low heat.

2

Bloom cocoa

Whisk in 1 tablespoon unsweetened cocoa powder and 3 tablespoons granulated sugar to the milk mixture until dissolved and no lumps remain. Continue heating — do not boil — until the mixture is steaming and small bubbles form around the edge (about 5–7 minutes).

3

Add chocolate

Reduce heat to low. Add 4 ounces chopped bittersweet chocolate to the warm milk, whisking constantly until fully melted and the mixture is smooth and glossy (about 2–3 minutes).

4

Season and finish

Stir in 1 teaspoon fine sea salt and 1 teaspoon pure vanilla extract. Taste and adjust sweetness, adding up to 1 tablespoon more sugar if desired. Keep the hot chocolate warm over the lowest heat, stirring occasionally (do not boil).

5

Serve

Ladle hot chocolate into 6 mugs (approximately 6–8 ounces per serving).

Optional Garnishes

6

Top each mug with a generous spoonful of whipped cream, a handful of mini marshmallows, a sprinkle of cinnamon, and 1–2 teaspoons grated dark chocolate or chocolate shavings.

7

If desired, finish with a tiny pinch (about 1/16 to 1/8 teaspoon) of flaky sea salt to enhance flavor.
