Prepare equipment

Preheat your espresso machine and cup by running a blank shot or pouring hot water into the cup then discarding. Ensure portafilter, basket and steam wand are clean and dry.

Dose and tamp

Weigh 18 g of freshly ground espresso coffee (fine grind). Distribute evenly in a 58 mm basket (or appropriate size), then tamp with 30 lbs / 13 kg of pressure to create a level puck.

Pull the shot

Lock the portafilter into the machine and start extraction. Aim for about 36 ml of espresso in 25–30 seconds (adjust grind and dose to dial in). Remove cup once extraction is complete.

Steamed milk

Prepare milk pitcher

Pour 150 ml of cold whole milk (or milk alternative) into a chilled 12–20 oz milk pitcher. Cold milk helps create fine microfoam.

Purge and position steam wand

Purge the steam wand for 1–2 seconds to remove condensation. Position the tip just below the milk surface at a slight angle so it creates a gentle whirlpool.

Texturize and heat milk

Start steaming with the wand partly submerged to introduce a small amount of air for 2–4 seconds (you should hear a subtle 'paper tearing' sound). Then lower the wand slightly to fully submerge and create a rolling vortex to break large bubbles into microfoam. Continue until pitcher feels just warm to the touch and then hot — about 60–65°C (140–150°F). Total steaming time: ~20–40 seconds depending on machine and volume.

Polish milk

Turn off steam, wipe and purge the wand. Tap the pitcher on the counter and swirl milk gently to remove remaining large bubbles and polish the microfoam into a glossy texture.

Assemble & finish

Combine espresso and milk

Pour the freshly pulled espresso into a preheated 150–180 ml cup. Immediately pour the steamed milk into the center of the espresso, starting higher to incorporate liquid, then lower the pitcher and move slightly to create a layered effect: roughly equal parts espresso, steamed milk, and foam (about 1/3 each) for a classic cappuccino.

Latte art and garnish

If desired, finish with simple latte art using controlled wrist motion. Dust the top with about 1 tsp of cocoa powder or ground cinnamon for flavor and presentation. Add sweetener to taste if desired.

Serve

Serve immediately while hot. Cappuccino is best enjoyed within a couple of minutes when microfoam is creamy and the drink is at optimal temperature.
