Prepare ingredients

Juice a fresh blood orange and a lime. Measure out tequila, triple sec, simple syrup, and bitters. If using egg white, separate and reserve approximately half an egg white (about 0.5 oz).

Dry shake (if using egg white)

Add tequila, triple sec, blood orange juice, lime juice, simple syrup, and egg white to a cocktail shaker without ice. Secure the lid and shake vigorously for 10–15 seconds to emulsify and build foam.

Wet shake

Open the shaker and add 6 ice cubes. Close and shake again vigorously for 10–15 seconds until the shaker is cold to the touch and nicely diluted.

Strain

Double strain the cocktail into a chilled old-fashioned glass (rocks glass) filled with 4 ice cubes using a Hawthorne and fine mesh strainer to remove ice shards and any pulp.

Finish & garnish

Add 2 dashes of Angostura bitters on top of the foam (if present) and gently drag a toothpick through the drops for a decorative pattern, or simply drop them in. Garnish with a blood orange wheel or twist on the rim.

Glass & Serving

Serve immediately while cold. Advise guests to stir lightly before sipping to marry the bitters and foam with the body of the cocktail.
