Prepare fish

Pat the snapper fillets dry with paper towels. Season both sides lightly with 1/2 tsp salt and 1/4 tsp black pepper (reserve remaining salt for asparagus and sauce as listed).

Set up dredging station

Place the flour in a shallow dish. In a second shallow bowl, whisk the eggs with 2 tablespoons milk until combined. In a third shallow bowl, combine the panko breadcrumbs, chopped parsley, lemon zest, and remaining 1/2 tsp salt. Mix to distribute evenly.

Coat fish

Working one fillet at a time, lightly dredge fish in flour, shaking off excess. Dip into the egg mixture, then press firmly into the panko mixture so breadcrumbs adhere evenly on both sides. Place coated fillets on a wire rack set over a baking sheet and let rest 5 minutes to help the coating set.

Cook fish

Heat a large nonstick or stainless-steel skillet over medium-high heat. Add 3 tablespoons neutral oil and 1 tablespoon unsalted butter. When oil shimmers and butter foams, add fillets (do not overcrowd — cook in two batches if necessary). Cook 3–4 minutes on the first side without moving, until golden brown and crust releases easily. Carefully flip and cook 2–3 minutes more, until fish registers 125–135°F (52–57°C) for medium doneness and flakes easily with a fork. Transfer to a warm plate and tent loosely with foil while finishing remaining fillets.

Rest and finish

If the crust needs extra crisping after resting, return fillets to the pan for 30–45 seconds per side. Keep warm in a low oven (200°F/95°C) while you finish sauce and asparagus.

Grilled Asparagus

Preheat a grill pan over medium-high heat (or preheat an outdoor grill to medium-high). Toss trimmed asparagus with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to coat evenly.

Place asparagus perpendicular to grill grates on the grill pan so they don’t fall through. Grill, turning occasionally, until tender-crisp and lightly charred, about 6–8 minutes depending on thickness. Remove to a platter and cover loosely to keep warm. Squeeze a lemon wedge over the asparagus just before serving.

Reduce shallot

In a small saucepan over medium heat, combine the minced shallot, 1/2 cup dry white wine, and 2 tablespoons white wine vinegar. Bring to a simmer and reduce until only about 2 tablespoons of liquid remain (about 6–8 minutes).

Emulsify butter

Reduce heat to low. If using, add 1 teaspoon heavy cream to the reduced liquid to help stabilize the sauce. Whisk in the cold butter, a few cubes at a time, allowing each addition to emulsify before adding more. Keep the sauce warm but do not let it boil, as high heat will break the emulsion.

Finish sauce

Once all butter is incorporated and sauce is silky, whisk in 3 tablespoons sweet Thai chili sauce until smooth. Season with 1/4 teaspoon salt and 1 teaspoon fresh lemon juice. Taste and adjust seasoning—if sauce is too sweet, add a splash more vinegar or lemon juice; if too sharp, a small pinch of sugar can balance.

Keep sauce warm at very low temperature until ready to serve. If the sauce begins to separate, whisk in 1–2 teaspoons cold water or a small cube of cold butter to bring it back together.

Plating & Garnish

Place a mound of grilled asparagus on each plate. Lay a panko-crusted snapper fillet atop the asparagus or beside it, as preferred.

Spoon 1/4 to 1/3 cup sweet chili beurre blanc around or over the fish (reserve some for the table). Garnish with microgreens or chopped parsley and a light dusting of extra lemon zest. Serve immediately with lemon wedges.
