Blend the Base Ingredients

In a blender, combine the raspberries, sugar, lemon juice, and water. Blend until smooth, then strain the mixture through a fine mesh sieve to remove the seeds.

Mix with Champagne

Stir in the Champagne or sparkling wine to the raspberry puree until well combined.

Freezing

Freeze the Mixture

Pour the mixture into a shallow dish and place it in the freezer. After 1 hour, stir the mixture with a fork to break up any ice crystals. Repeat this process every 30 minutes until the sorbet is fully frozen and fluffy, about 3-4 hours.

Serving

Serve the Sorbet

Scoop the sorbet into bowls and garnish with fresh raspberries, blueberries, and mint leaves. Enjoy!
