Prepare glass

If serving chilled, place the coupe or rocks glass in the freezer for 5–10 minutes or fill with ice and water while you prepare the cocktail, then discard before pouring.

Dry shake (if using egg white)

Add gin, fresh lemon juice, simple syrup, orange liqueur and egg white to a cocktail shaker. Seal and shake vigorously without ice for 15 seconds to emulsify and build foam.

Wet shake

Add a handful of ice to the shaker (about 4–6 large cubes or ~1 cup). Seal and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the outside is frosty.

Strain

Double-strain the cocktail into the chilled coupe or a rocks glass filled with fresh ice using both the Hawthorne and the fine strainer (fine strainer optional but recommended if you used egg white). If you omitted egg white, a single strain is sufficient.

Finish with bitters

Add 2 dashes of Angostura bitters on top of the foam (if present). Optionally use a toothpick to gently swirl the bitters for a decorative pattern.

Garnish and serve

Express a lemon twist over the drink to release oils, run it around the rim and drop it into the glass (or place a lemon wheel on the rim). Serve immediately.

Use a jigger to accurately measure spirits, citrus and liqueur. Use the Hawthorne strainer when pouring from the shaker; use a fine strainer for the final pour if you used egg white to ensure a smooth texture. Chill the glass ahead of time with ice or in the freezer.
