Juniper Syrup

Make syrup

Combine 3 oz granulated sugar, 3 oz water, and 1 tablespoon lightly crushed juniper berries in a small saucepan. Add the optional lemon peel if using. Bring to a gentle simmer over medium-low heat, stirring until the sugar dissolves. Simmer for 4–5 minutes to infuse flavor, then remove from heat and cool to room temperature (about 20–30 minutes). Strain through a fine mesh sieve or cheesecloth into a clean container, pressing on the berries to extract flavor. Discard solids. Refrigerate; syrup keeps about 2 weeks.

Dry shake

Chill a coupe or Nick & Nora glass (optional). In a cocktail shaker, combine 1.5 oz Mischief Golden Rye, 0.5 oz Oola Waitsburg Bourbon, 0.75 oz fresh lemon juice, 0.5 oz juniper syrup, and 1 egg white. Without ice, seal the shaker and shake vigorously for 15–20 seconds to emulsify and create a thick foam.

Wet shake

Add a generous handful of ice (about 1 cup) to the shaker. Shake again vigorously for 12–15 seconds until the shaker is very cold to the touch and the outside has a frost. This chills and dilutes the drink properly while further integrating the foam.

Strain and finish

Double-strain the cocktail into the chilled coupe using a Hawthorne and fine mesh strainer (or one fine strainer) to ensure a silky texture. Allow the foam to settle on top for a few seconds.

Bitters & garnish

Carefully add 3 dashes of Angostura bitters onto the foam. Using a toothpick or a small skewer, drag the bitters into a simple pattern if desired. Express a lemon twist over the drink by squeezing it to release oils, then rub the peel on the glass rim and drop it into the drink as garnish.

Serve immediately while foam is fresh and aromatic.
