Prepare mixing glass
Fill a mixing glass or large bar shaker with the listed ice (about 6 large cubes) to properly chill and dilute the drink.
Measure and add spirits
Pour 2.5 oz House Capitol Vodka and 0.5 oz Vermouth Bianco into the mixing glass over the ice.
Prepare garnish
If using a lemon twist: cut a thin strip of lemon peel, express the oils over the chilled glass by holding the peel over the glass and giving it a firm twist, then rub the peel on the rim and drop it in. If using a green olive: thread one olive on a cocktail pick.
Strain and serve
Discard the ice or water from the chilled serving glass. Using a julep or hawthorne strainer, double-strain (if desired) the chilled martini from the mixing glass into the chilled coupe/martini glass, yielding a total pour of 3 oz. Garnish with the prepared lemon twist or olive and serve immediately.
