Prepare and season
Pat calamari rings dry with paper towels to remove excess moisture. Season with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper. Lightly dredge the rings in the gluten-free flour, shaking off any excess.
Sear calamari
Heat 2 tbs extra-virgin olive oil in a large skillet over medium-high heat until shimmering. Add calamari rings in a single layer (work in batches if needed). Sear for 45–60 seconds per side until just opaque and lightly golden—do not overcook or they become rubbery. Transfer calamari to a plate and set aside.

Sweat aromatics
In the same skillet, lower heat to medium and add 2 tbs extra-virgin olive oil. Add sliced garlic and chopped shallot and cook, stirring frequently, until soft and fragrant, about 1–2 minutes. If making spicy, add 1/2 tsp crushed red pepper flakes and toast for 30 seconds.
Deglaze and simmer
Pour in 1/4 cup dry white wine to deglaze the pan, scraping up any browned bits with a wooden spoon. Let the wine reduce by half, about 1–2 minutes. Add the 14 oz crushed tomatoes, 2 tbs rinsed capers, 1/4 cup halved Kalamata olives, and 1/2 tsp sugar (if using). Stir to combine and bring to a gentle simmer.
Finish sauce
Simmer the sauce gently for 6–8 minutes to meld flavors and reduce slightly. Season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. Stir in 1 tbsp fresh lemon juice, 2 tbs chopped parsley, and 1 tbsp chopped oregano or basil.
