Prepare and dry-shake

If using the egg white, add gin, Aperol, lemon juice, sweet vermouth, simple syrup, orange bitters and egg white to a cocktail shaker. Dry-shake vigorously (no ice) for 15–20 seconds to emulsify and build a silky foam.

Wet shake

Add 2 large ice cubes (or enough to fill the shaker about three-quarters) to the shaker. Shake hard for 12–15 seconds until the shaker is very cold to the touch and well-aerated.

Strain

Double-strain the cocktail through a fine-mesh strainer into a chilled coupe or Nick & Nora glass to remove ice chips and any coagulated egg white solids.

Garnish & serve

Express an orange twist over the surface of the drink to release oils, then either lay the twist atop the foam or hang it on the rim. Alternatively, float a dehydrated orange slice for a more visual presentation.

Serve immediately. Encourage the drinker to take in the citrus aroma before the first sip.
