Prepare the Ingredients

Preheat your wood-fired pizza oven to 500°F (260°C). Slice the fresh pineapple into rings and then into bite-sized pieces. Chop the onion finely. Cook the bacon until crispy and crumble it. Grate the mozzarella and caciocavallo cheese.

Prepare the Pizza Dough

Roll out the pizza dough on a floured surface to your desired thickness. Transfer the rolled dough to a pizza peel that has been lightly dusted with flour or cornmeal.

Assemble the Pizza

Brush the dough with olive oil. Evenly distribute the mozzarella and caciocavallo cheese over the dough. Add the chopped onions, followed by the pineapple pieces and crumbled bacon. Season with salt and black pepper to taste.

Cook the Pizza

Slide the pizza into the preheated wood-fired oven. Bake for approximately 8-10 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

Serve

Remove the pizza from the oven and let it cool slightly before serving. Cut into slices if desired or serve whole as per your menu description.
