Prepare links
If links are in a coil, separate into individual links. Pat them dry with paper towels. If using store-bought bacon, leave whole strips for wrapping (optional).
Optional bacon wrap
Wrap each hot link with 1–2 slices of bacon, securing with toothpicks if necessary. This adds smoke and richness but can be omitted for a leaner result.
Preheat grill to medium-high (about 375–425°F / 190–220°C). If using a pan, heat a heavy skillet or cast-iron over medium-high heat and add 1 tablespoon oil.
Place links on the grill grates over direct heat (or into the hot skillet). Cook covered for 3–4 minutes, turn, and continue turning every 3–4 minutes so they brown evenly and reach an internal temperature of 160°F (71°C). Total cook time will be 12–18 minutes depending on thickness. If bacon is used, watch for flare-ups and move to indirect heat if needed.
Remove links to a plate and tent with foil; let rest 5 minutes before serving or slicing.

Make spice paste
In a small bowl combine paprika, ground cumin, chili powder, dried oregano, kosher salt, black pepper, brown sugar and optional crushed red pepper flakes. Stir to blend evenly.
In a separate bowl whisk together minced garlic, apple cider vinegar and olive oil. Add the dry spice mix to the liquid and whisk to make a thin paste.
When links are nearly done (about 3–4 minutes before finished), brush the spice paste over the hot links on both sides. This will create a glossy, seasoned crust without burning the sugars. If you prefer to marinate beforehand, prick sausage casings a couple times and brush with half the paste; allow to sit 30 minutes refrigerated, then reserve remaining paste for basting while cooking.
With the onions: during the last 6–8 minutes of sausage cooking, add a cast-iron or grill-safe pan with 1 tablespoon oil and the thinly sliced yellow onion. Sauté or grill the onions until softened and golden (about 6–8 minutes), seasoning with a pinch of salt and a little of the spice mix for extra flavor.
Finish & Serving
Slice rested links on the bias if serving on rolls, or leave whole for plated service.
Split bolillo rolls or buns and lightly toast on the grill for 1–2 minutes until golden and warm.
Assemble: place sausage in toasted roll, top with sautéed onions, sliced white onion, pickled jalapeños to taste, and chopped cilantro. Squeeze lime over the top. Serve remaining lime wedges on the side.
If serving by the pound (retail style): keep links whole, label by weight, and provide toasted rolls, grilled onions, and condiments on the side for customers to assemble.
