Trim, bind, and season

Trim excess fat from the brisket leaving a thin (about 1/8–1/4 inch) fat cap. Pat the meat dry. Spread the yellow mustard evenly over the exterior of the brisket to help the rub adhere. Combine kosher salt, black pepper, garlic powder and smoked paprika and apply in an even layer, pressing the rub into the meat.

Preheat smoker

Preheat your smoker to 225°F (107°C). If using a charcoal or pellet smoker, add wood chips (oak, hickory, or pecan) to create a steady mild smoke.

Smoke the brisket

Place the brisket fat-side up on the smoker grates. Smoke until a dark bark forms and the internal temperature reaches about 165°F (74°C). This typically takes 4–6 hours depending on thickness. Replenish wood chips and maintain a steady temperature.

Rest, wrap and continue cooking

When the brisket hits ~165°F, wrap it tightly in butcher paper or foil with 1/2 cup of reserved bandirria sauce (see next section) or a splash of beef stock to keep moisture. Return to the smoker and continue until the internal temperature reaches 203°F (95°C) for fork-tender meat, another 3–6 hours depending on size.

Rest before slicing

Remove wrapped brisket and let rest for at least 45 minutes to 1 hour in a cooler or insulated container to redistribute juices. Unwrap and reserve the cooking juices.

Slice or shred

Slice the brisket thinly against the grain for tacos. Alternatively, pull into large shreds and mix with some reserved bandirria sauce for juicy taco filling.

Toast and rehydrate chiles

Heat a skillet over medium heat and toast the dried guajillo and ancho/pasilla chiles for 10–20 seconds per side until fragrant but not burnt. Remove and soak the toasted chiles in hot water for 15 minutes to soften. Reserve 1/2 cup of the soaking liquid.

Char tomato and aromatics

In the same skillet, add 1 tablespoon vegetable oil and char the halved roma tomato, quartered onion and whole garlic cloves until blackened in spots, about 5–7 minutes, turning to get even charring. This adds depth to the sauce.

Blend sauce

Drain chiles (reserve soaking liquid). In a blender combine softened chiles, charred tomato, onion, garlic, apple cider vinegar, oregano, cumin, bay leaf, beef stock, 1 teaspoon salt, 1/2 teaspoon black pepper and 1/4–1/2 cup of the chile soaking liquid (or reserved soaking liquid) to reach a smooth but slightly thick consistency. Blend until very smooth.

Simmer and adjust

Pour blended sauce into a saucepan and simmer over medium-low heat for 15–20 minutes to marry flavors and reduce slightly. Taste and adjust salt, acidity or spice as needed. If too thick, add additional beef stock. Remove and discard bay leaf. Reserve 1/2 cup of finished sauce for wrapping the brisket and keep some warm for serving.

Optional finish

For a glossier, richer sauce, whisk in 1 tablespoon of butter at the end of simmering off heat.

Tacos & Assembly

Warm tortillas

Heat a cast-iron skillet or comal over medium-high heat. Brush each corn tortilla lightly with neutral oil and warm 20–30 seconds per side until pliable and slightly toasted. Keep wrapped in a clean towel to stay warm.

Reheat brisket in bandirria

If sliced or shredded brisket has cooled, gently rewarm pieces in a skillet with 1/2 cup of the reserved bandirria sauce over medium-low heat until heated through and coated—about 3–5 minutes. This infuses the meat with sauce and keeps it moist.

Assemble tacos

Build each taco: place a warm tortilla, add 2–3 ounces (about 1/4 cup) of sliced or shredded smoked brisket mixed with bandirria sauce, sprinkle a teaspoon of finely chopped yellow onion and cilantro, add a few rings of pickled red onions if using, and a small sprinkle of shredded cheese if desired.

Finish and serve

Serve immediately with lime wedges and extra bandirria sauce on the side for dipping or drizzling. Recommend 2 tacos per person as a slider-style serving; adjust portions if serving as a main course.
