Brisket
Trim
If needed, trim excess hard fat from the surface of the brisket leaving approximately 1/4 inch of fat cap to keep meat moist during long cooking. Remove any silver skin or large flaps that will not render.
Dry Rub
In a small bowl combine kosher salt, coarsely ground black pepper, garlic powder, onion powder, smoked paprika and brown sugar (if using). Rub the spice mixture evenly over all surfaces of the brisket. Press the rub into the meat and let rest 30–60 minutes at room temperature or refrigerate overnight for deeper flavor.
Cook
Preheat
Preheat oven to 275°F (135°C). If using a smoker, preheat to 225–250°F (107–121°C) and prepare for indirect cooking with wood of choice (oak, hickory, or mesquite for more smoke).
Sear (optional)
For additional crust, heat a heavy-duty skillet or cast-iron pan over high heat with 1 tablespoon neutral oil until shimmering. Sear the brisket fat-side down 2–3 minutes until browned, then sear the flat and point edges 1–2 minutes each. This step is optional if smoking low and slow.
Roast or Smoke
Place the brisket fat-side up in a roasting pan or on the smoker grates. Add beef broth, apple cider vinegar and Worcestershire sauce to the pan (not to cover the brisket—liquid should sit in the bottom to create steam). Tent the brisket loosely with foil (if in oven) or leave unwrapped on the smoker for the first 4 hours for bark formation. Cook until internal temperature reaches 195–205°F (90–96°C) for slicing tenderness, approximately 1.25–1.5 hours per pound in oven at 275°F, or longer at lower smoker temperature. For a 5 lb brisket expect 6–8 hours in oven, 8–12 hours on smoker.
Spritzing (smoker only)
If smoking, spritz the brisket every 60–90 minutes with a mixture of 1 part apple cider vinegar to 3 parts water (or use the beef broth mixture) after the first 2 hours to maintain surface moisture and aid bark development.
Rest & Slice
Rest
When internal temperature reaches 195–205°F and probe slides in like softened butter, remove brisket from heat. Transfer to a cutting board, reserve pan juices, and wrap loosely in foil and a towel. Rest 60–90 minutes to allow juices to redistribute.
Separate Point and Flat
If point and flat are still joined, use a long slice to separate them along the natural seam. This makes slicing easier because the grain differs between the two.
Slice
Using a sharp slicing knife, identify the grain of each piece. Slice the flat against the grain into 1/8–1/4 inch thick slices. For the point, trim any excess fat, then slice against the grain or cube for burnt ends. Keep slices uniform for even portioning.
Finish
Warm the reserved braising liquid with 2 tablespoons unsalted butter and skim any fat. Lightly brush sliced brisket with a spoonful of the warm jus or return slices briefly to a sheet pan in a 300°F oven for 8–10 minutes to rewarm and moisten. Sprinkle chopped fresh parsley for color.
Serve
Arrange sliced brisket on a warmed platter. Serve with optional barbecue sauce and/or horseradish cream on the side. Offer reserved jus for guests to spoon over slices. Serve with desired sides (potatoes, pickles, coleslaw, or rolls).
