Marinate the Chicken

Cut the chicken thighs into bite-sized pieces and place them in a bowl. Combine the soy sauce, sake, grated ginger, and grated garlic in a separate bowl. Pour the marinade over the chicken, making sure all pieces are coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Coating

In a separate bowl, mix together the cornstarch, all-purpose flour, salt, and black pepper. This will create the coating for the chicken.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 170°C (340°F).

Coat the Chicken

Remove the chicken from the marinade and let excess liquid drip off. Dredge each piece of chicken in the flour mixture, ensuring they are well coated.

Fry the Chicken

Carefully place the coated chicken pieces into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and cooked through, about 4-6 minutes. Use a slotted spoon to transfer the fried chicken to a paper towel-lined plate to drain excess oil.

Serve the chicken karaage hot, with lemon wedges or your favorite dipping sauce on the side.
