Prepare Stuffed Onion

Cook the Filling

In a bowl, combine ground lamb, cooked rice, minced garlic, chopped parsley, cumin, paprika, salt, and black pepper. Mix well.

Prepare the Onions

Carefully cut the tops off the large onions and scoop out the insides, leaving a shell. Reserve the onion pulp for another use or discard.

Stuff the Onions

Fill each onion shell with the lamb mixture, pressing down gently to pack it in.

Drizzle with Olive Oil

Drizzle the stuffed onions with olive oil and place them on a baking sheet.

Bake

Preheat the oven to 375°F (190°C) and bake the stuffed onions for about 30-35 minutes until the onions are tender.

Marinate and Cook Lamb Chops

Prepare Marinade

In a bowl, whisk together olive oil, red wine vinegar, chopped rosemary, minced garlic, salt, and black pepper.

Marinate Lamb Chops

Place the lamb chops in a shallow dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 1 hour or overnight for best flavor.

Prepare Charcoal Grill

Prepare your charcoal grill and let the coals get hot.

Grill the Lamb Chops

Remove the lamb chops from the marinade and grill them over direct heat for about 4-5 minutes on each side, or until cooked to your desired doneness.
