Prepare Soda Base
Make simple sweetened base
If using granulated sugar: dissolve the sugar in 2 tablespoons hot water to make a quick syrup. Alternatively use 2 tablespoons prepared simple syrup. Combine the cold carbonated water, simple syrup, lemon juice and flavor extract in a large pitcher. Stir gently to incorporate — avoid vigorous stirring to retain carbonation; gentle folding or stirring is sufficient.
Taste the mixture. If you want a brighter, more sour profile similar to commercial soft drinks, add the citric acid 1/4 teaspoon at a time up to the indicated 1 teaspoon, tasting between additions. If you are making a cola style drink, add the caramel color or pinch of molasses and stir gently until evenly distributed.
Preservation & Safety (optional)
If you plan to store the drink refrigerated for a few days and want to reduce wild yeast/bacteria, stir in crushed campden tablet (optional) immediately after preparing the base. This is optional and normally not required for refrigerated, short‑term storage.
Canning & Packaging
Ensure cans or bottles are clean and lightly chilled. Using a funnel, fill each can or bottle, leaving roughly 1/2 inch (12 mm) headspace at the top to allow for expansion and to preserve carbonation. Work quickly but gently to preserve as much carbonation as possible.
Seal the cans or bottles according to the container type (snap lids for cans, caps for bottles). If using non‑pressurized caps on bottles, chill immediately and keep refrigerated; drink within 3–5 days. Properly sealed aluminum cans filled with carbonated beverage will hold carbonation longer if sealed with can seamer equipment (home seaming is not recommended without proper equipment).
Serve
Chill the canned drink thoroughly before serving. When ready to serve, open a can, pour over ice if desired, and garnish with a lemon or lime wedge. Enjoy cold.
