Method
Classic Virgin Margarita (Rocks)
Prepare glass rim
Pour the coarse salt onto a small plate. Run a lime wedge around the rim of each serving glass to moisten, then dip the rims into the salt so they pick up an even coating. Set glasses aside.
Mixing
In a large pitcher, combine 1 cup fresh lime juice, 1/4 cup fresh lemon juice, 1/2 cup agave syrup, and 1/4 cup orange juice. Whisk until smooth.
Adjust consistency
Add 1/2 cup cold water to the pitcher and stir. Taste and adjust sweetness or acidity: add up to 2 tablespoons more agave for sweeter, or up to 2 tablespoons more lime juice for more tartness.
Serve over ice
Fill each prepared glass with ice cubes (about 1/2 cup per serving). Pour the margarita mix over the ice, filling glasses. Garnish each with a lime wedge on the rim. Serve immediately.
Frozen Virgin Margarita (Blended)
Prepare glass rim
Pour coarse salt onto a small plate. Rub a lime wedge around the rim of each serving glass and dip in salt. Place glasses in the freezer for 5 minutes while you blend.
Blend
In a high-speed blender combine 3/4 cup fresh lime juice, 1/4 cup fresh lemon juice, 1/2 cup agave syrup, 1/4 cup orange juice and 4 cups crushed ice. Pulse to combine, then blend on high until smooth and slushy (about 30–45 seconds). If mixture is too thick, add 1–2 tablespoons water and blend briefly; if too thin, add a handful more ice and blend.
Taste and adjust
Taste the blend and adjust sweetness or acidity as needed: add small amounts of agave or lime accordingly and re-blend for 5–10 seconds.
Adding Flavors (Optional)
To any rocks or frozen batch, add 1/2 cup fruit puree (strawberry, mango, or peach) per batch and stir (rocks) or blend (frozen) until evenly distributed. For a subtle color/taste without changing texture much, add 2 teaspoons non-alcoholic blue curaçao syrup. Adding flavor costs an extra portion if serving commercially.
