Prepare Produce
Halve the avocados lengthwise, remove pits, and scoop flesh into a medium bowl.
Finely dice the red onion to measure about 1/2 cup. Seed the tomato by slicing in half and gently squeezing or scooping out seeds; dice to yield about 1/2 cup.
Make Guacamole
Immediately stir in the 2 tablespoons fresh lime juice and 1 teaspoon sea salt to arrest browning and season evenly. Add 1 teaspoon freshly ground black pepper and mix.
Fold in the diced red onion, diced tomato, chopped cilantro, and minced jalapeño. Taste and adjust seasoning: add up to 1/2 teaspoon more salt or additional lime juice if needed.
If you prefer a creamier guacamole, mash a little more until desired consistency is reached.
Finish & Serve
Transfer guacamole to a serving bowl. Optionally smooth the top, sprinkle extra cilantro leaves, drizzle 1 teaspoon extra-virgin olive oil, and arrange lime wedges alongside.
