Combine the granulated sugar, cayenne pepper, and optional fine salt in a shallow dish. Mix thoroughly so cayenne is evenly distributed.

Muddle jalapeño
Place the sliced jalapeño (about half a pepper; remove seeds for less heat) in a cocktail shaker or mixing glass. Add the simple syrup to help extract the oils and muddle 6–8 times until aromatic. Taste a small amount of muddled liquid if you want to adjust heat—add less jalapeño next time for milder flavor.
Add passionfruit and citrus
Add the passionfruit pulp (seeds and all are fine), fresh lime juice and the rum or vodka (if using) to the shaker with the muddled jalapeño. Fill the shaker with ice.
Shake vigorously for 10–15 seconds until the outside of the shaker is cold. This chills and slightly dilutes the mixture and helps integrate the heat, tartness and sweetness.
Fill the prepared rimmed glass with fresh ice. Strain the shaken mixture into the glass over the ice using a fine mesh strainer to catch jalapeño bits and passionfruit seeds if you prefer a cleaner drink.
Top with about 90 ml club soda (adjust to taste) and gently stir once or twice to combine. Taste and add an extra 5–10 ml simple syrup or a squeeze more lime if needed.
Garnish with a lime wedge and a mint sprig (optional). Serve immediately.
