Prepare Watermelon-Mint Purée
Blend
Place the chopped seedless watermelon (2 cups) and 8 of the mint leaves into a blender. Add the fresh lime juice (2 tbsp) and simple syrup (1 tbsp) if you prefer a sweeter drink. Blend on high until smooth, about 30–45 seconds.
Strain (optional)
If you want a clear, smooth cocktail, strain the purée through a fine-mesh sieve into a bowl or pitcher, pressing with a spoon to extract as much liquid as possible. Discard solids. If you prefer a pulpy, rustic drink, skip straining.
Assemble Cocktail
Fill a large pitcher (or two individual glasses) with the ice cubes (1 cup). Pour the watermelon-mint purée (about 1 to 1 1/4 cups after straining) over the ice.
Add the chilled lemonade (1 cup) to the pitcher and stir gently to combine.
Top the mixture with chilled club soda (1 cup) to add effervescence. Stir once gently to incorporate without flattening the soda.
Garnish & Serve
Taste and adjust: if the cocktail needs more brightness, add an extra 1/2 tbsp lime juice; if it needs sweetness, stir in up to 1 tbsp more simple syrup. Stir gently.
Divide into two glasses (or serve from the pitcher). Garnish each glass with a lime wheel or wedge and a sprig of mint. Optionally, lightly slap the mint between your palms before garnishing to release aroma.
Serve immediately while cold and fizzy.
