Ginger-Sugar Rim

Combine the sugar and ground ginger on a small plate and mix evenly.

Moisten the rim of a chilled coupe or Collins glass with 1/2 tsp lime juice, then dip the rim into the ginger-sugar, pressing lightly so the mixture adheres. Set the glass aside.

Fig Syrup (homemade option)

Make Fig Syrup

Place figs, 1/2 cup water and 1/2 cup sugar in a small saucepan. Bring to a gentle simmer over medium-low heat, mashing figs lightly with a spoon. Simmer for 8–10 minutes until figs are softened and sugar is dissolved.

Remove from heat, stir in 1/2 tsp lemon juice, and let cool for 10 minutes. Strain through a fine mesh sieve into a jar, pressing solids to extract syrup. Cool completely before using. Refrigerate unused syrup for up to 2 weeks.

Cocktail Assembly

In a cocktail shaker, place the 1/2 chopped pear and muddle until mostly puréed but with a bit of texture (about 20–30 seconds).

Add the fresh lime juice (1/2 oz), fig syrup (1/2 oz), and a large handful of ice (about 4–6 cubes).

Shake vigorously for 10–12 seconds to chill and slightly dilute the mixture.

Double-strain the shaken mixture into the prepared ginger-sugar rimmed glass (use a fine mesh strainer over the shaker strainer) to remove pear solids.

Top gently with 3 oz elderflower tonic poured over the back of a spoon to preserve effervescence and create a light float.

Garnish with a thin pear slice and a lime wheel on the rim; optionally float half a small dried or fresh fig on top.
