Mix dry ingredients
Combine 2 cups masa harina and 1 tsp fine salt in a medium mixing bowl; stir briefly to distribute the salt evenly.
Add liquid
Gradually pour 1 1/4 cups warm water into the masa while mixing with your hand or a fork. If using, add 1 tablespoon vegetable oil or melted lard at this stage to improve pliability. Mix until a rough dough forms.
Knead and rest
Knead the dough in the bowl (or on a clean surface) for 1–2 minutes until it holds together and feels smooth and slightly tacky but not sticky. If dough is crumbly, add water 1 tablespoon at a time; if overly sticky, add masa harina 1 tablespoon at a time. Form into a ball, cover tightly with plastic wrap or a damp towel, and let rest 15–30 minutes to hydrate fully.
Shaping and Cooking
Portion the dough
Divide the rested dough into 8 equal portions for roughly 6–7 inch tortillas (about 55–60 g each). Roll each portion into a smooth ball and keep covered with a damp towel to prevent drying.
Press the tortillas
Line a tortilla press (or use a heavy skillet) with two sheets of plastic or parchment (you may use cut-open plastic bag or corn husk if preferred). Place a dough ball in the center and press until it is about 1.5–2 mm thick and roughly 6–7 inches in diameter. Carefully peel off the top plastic.
Cook on a griddle
Preheat a heavy cast-iron skillet or comal over medium-high heat until hot but not smoking (about 1–2 minutes). Transfer the pressed tortilla to the dry skillet and cook 30–45 seconds until the edges begin to lift and brown spots appear. Flip and cook another 30–45 seconds. The tortilla should be cooked through but pliable. Transfer to a plate and cover to keep warm while you work, repeating for the remaining tortillas.
Shallow-fry to harden
Pour 1/2 cup neutral oil (vegetable, canola, or corn oil) into a large skillet to reach about 1/8–1/4 inch depth and heat over medium-high until shimmering and 350°F (175°C) if using a thermometer. Working in batches (2–3 at a time), carefully lay a cooked tortilla into the hot oil. Fry for about 20–40 seconds per side, depending on desired crispness: 20–30 seconds for a crisp-tender shell, 30–40+ seconds for very crunchy. Use tongs to flip and shape as desired (for taco shells, hold with tongs at the center to fold while frying). Remove to a paper towel-lined rack or tray to drain and season immediately with a sprinkle of salt if desired.
Cool and store
Let the fried hard tortillas cool completely; they will continue to crisp as they cool. Store in an airtight container at room temperature for up to 2–3 days or freeze stacked with parchment between for up to 1 month.
Optional Serving / Finish
Serve warm or at room temperature with lime wedges and additional salt to taste. Use as taco shells, tostada bases (if fried flat and pressed), or for scooping salsas and dips.
