Soft-Cooked Corn (for 4 servings)

Method

Soft-Cooked Corn

1

Prepare corn

Husk the corn: pull off and discard the outer green husks and silk. Rinse each ear under cool running water to remove remaining silk strands and pat dry with a clean towel.

2

Bring water to a simmer

Place a large pot on the stove and add 8 cups of water and 1 tablespoon of salt. Bring water to a gentle simmer over high heat. You want steady small bubbles, not a rolling boil, which helps keep the kernels tender.

3

Cook corn

Carefully add the ears of corn to the simmering water. Reduce heat slightly if needed to maintain a gentle simmer. Cover the pot and cook for 6–8 minutes for tender, soft kernels. If your ears are very large, aim for 8 minutes; smaller ears may be done at 6 minutes. Avoid overcooking to prevent mushy texture.

4

Remove and drain

Using tongs, remove the ears of corn from the water and place them on a plate or tray to drain for 1 minute. Shake gently to remove excess water.

5

Season and serve

While still hot, brush each ear with about 1/2 tablespoon of unsalted butter. Sprinkle each ear with a pinch of black pepper (about 1/4 teaspoon per ear) and, if desired, scatter chopped fresh parsley over the corn. Serve immediately.

6

Notes: For a slightly sweeter result, you can add a splash (about 1/4 cup) of milk or a tablespoon of sugar to the simmering water. For individual portions, adjust butter and seasoning to taste.
