Prep aromatics and spices
Finely chop the yellow onion so it measures roughly 1 cup. Mince 3 garlic cloves. In a small bowl, combine chili powder, ground cumin, smoked paprika, ground coriander, dried oregano, cayenne pepper, kosher salt, and black pepper; mix thoroughly and set aside.
Cooking
Heat pan & sweat onion
Place a large skillet over medium heat and add 1 tablespoon olive oil. When the oil shimmers, add the chopped onion. Cook, stirring occasionally, until the onion is softened and translucent, about 5–7 minutes. Do not brown heavily — you want sweetness and moisture.
Brown the sirloin
Increase heat to medium-high. Add the 1 lb lean ground sirloin, breaking it up with a spatula. Spread it into an even layer and let it brown undisturbed for 1–2 minutes, then continue breaking and stirring until most of the pink is gone, about 4–5 minutes total. Drain any excess fat if more than 1–2 tablespoons remain (lean sirloin usually produces little fat).
Add spice blend
Reduce heat to medium. Sprinkle the prepared spice blend evenly over the browned meat. Stir thoroughly so the spices coat all the meat and toast lightly for 1 minute; this blooms the spices and deepens flavor.
Add tomatoes & broth
Pour in the 14.5 oz canned diced tomatoes with their juices and 1 cup beef broth. Stir to combine, scraping any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer.
Simmer to develop flavor
Reduce heat to low and simmer, uncovered, stirring occasionally, until the sauce reduces slightly and thickens to a saucy consistency, about 10–12 minutes. Taste and adjust seasoning: add more salt or a pinch more cayenne for heat if desired.
Finish
Remove the skillet from heat. Stir in 1 tablespoon lime juice and 2 tablespoons chopped fresh cilantro to brighten the flavors. If using, sprinkle 1/2 cup shredded cheddar or crumbled cotija over the top to melt slightly before serving.
Serve warm as a taco or rice topping, inside burritos, over baked potatoes, or as part of a bowl. Garnish additional cilantro and lime wedges if desired.
