Heat and dissolve

Combine 1/4 cup granulated sugar and 1/4 cup water in a small saucepan. Warm over low heat, stirring, until sugar is fully dissolved and the liquid is clear, about 2–4 minutes. Do not boil. Remove from heat and cool to room temperature. Transfer to a jar; refrigerate. Yields about 1/2 cup simple syrup.

Chill a clean 12 fl oz can or a 12 fl oz glass bottle (or use a cold glass) in the fridge for at least 15 minutes. Cold containers help the soda retain carbonation and taste more like a canned product.

If using ice, fill the chilled glass lightly with 3–4 ice cubes. For the authentic canned experience, skip ice and keep everything cold instead.

Measure and add 1.5 tablespoons simple syrup into the chilled can or glass. Adjust to taste: increase to 2–3 tablespoons for a sweeter, soda-like profile, or reduce to 1 tablespoon for lighter sweetness.

Add 1 teaspoon fresh citrus juice (lemon or lime) or 1 teaspoon flavored syrup (like cola or root beer syrup) to provide acidity and depth. If making a cola-style soda, add 1 teaspoon cola extract (or 1/2–1 tsp vanilla + 1/4 tsp orange extract). For an orange soda, use 1 tsp orange extract and 1/4 tsp vanilla.

If using an extract, add up to 1 teaspoon of your chosen extract. Start with 1/4–1/2 teaspoon if the extract is concentrated, then taste and adjust.

Slowly pour 12 fl oz chilled carbonated water down the inside wall of the can or glass to preserve as much carbonation as possible. Pour in a steady stream but avoid splashing.

Gently stir once with a long spoon (1–2 slow turns) to combine the sweetener and flavorings with the carbonated water. Avoid vigorous stirring to prevent excessive fizzing and loss of carbonation.
