Infused Whiskey

Method

Infused Whiskey

1

Prepare a clean 500–750 ml glass bottle or jar with a tight lid. Add the orange peel strips and halved Luxardo cherries to the jar.

2

Pour 375 ml Knob Creek bourbon over the fruit and peels, making sure they are fully submerged.

3

Seal the jar and store at room temperature out of direct sunlight. Let steep for 24–48 hours for a pronounced cherry-orange aroma and flavor. Taste after 24 hours; if you want a brighter orange and lighter cherry, stop at 24 hours; for richer cherry notes let steep 48 hours. Do not exceed 72 hours to avoid excessive bitterness from pith or over-extraction.

4

When infusion reaches desired flavor, strain the bourbon through a fine-mesh sieve lined with cheesecloth into a clean bottle to remove solids. Discard solids. Label and refrigerate the infused bourbon. Yield: roughly 350–360 ml infused whiskey.

Cocktail Assembly

5

Chill glass and prepare ice

Place an old-fashioned glass in the freezer for a few minutes or fill it with ice water to chill while preparing ingredients. Prepare one large clear ice cube if available.

6

Build cocktail

Add 60 ml of the cherry-orange infused Knob Creek to a mixing glass or directly into the chilled old-fashioned glass if you prefer stirred-not-poured technique. Add 7.5 ml (about 1/4 oz) agave nectar and 3 dashes of whiskey barrel-aged bitters.

7

Stir and dilute

If using a mixing glass: fill mixing glass with ice and stir gently for 20–30 seconds until well chilled and slightly diluted. If building in the serving glass: add the large ice cube and stir gently with a bar spoon for 20–30 seconds.

8

Finish and garnish

Strain (if mixed in a mixing glass) into the chilled old-fashioned glass over a single large ice cube. Express the oils of one large orange peel over the surface by holding it skin-side down and giving it a sharp twist about 3–4 inches above the drink, then rub the peel around the rim and drop it into the glass. Skewer or drop a Luxardo cherry into the drink as garnish.

9

Serve immediately. Sip slowly to enjoy the layered cherry-orange infused bourbon, agave sweetness, and whiskey barrel bitters.
