Combine and chill
Add 2 oz Xicaru Silver Mezcal, 0.75 oz yuzu purée, 0.5 oz fresh lime juice, 0.5 oz Giffard Ginger, and 0.5 oz agave nectar to a cocktail shaker.

Add ice and shake
Fill the shaker with ice (about 6 medium cubes). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled and slightly frosted. This chills and dilutes the drink to balance acidity and sweetness.

Double-strain
Prepare a rocks or coupe glass (see rim directions). Using a Hawthorne and a fine mesh strainer, double-strain the cocktail into the prepared glass to remove ice shards and any yuzu solids, yielding a silky texture.

Prepare Tajín rim
On a small plate, combine 1 tsp Tajín with 1/4 tsp fine sea salt and mix. Run the lime wedge around the rim of the chilled glass to moisten it, then dip the rim into the Tajín-salt mix to create an even coating. Shake off excess.

Garnish
Float a thin lime wheel on the surface of the cocktail or twist a strip of lime zest over the drink to release oils and drop it in. Optionally tuck the used lime wedge on the rim for presentation.
