Preheat the oven to 425°F (220°C). If using store-bought chips, spread 10 cups of tortilla chips in an even layer on a large rimmed baking sheet. Drizzle 2 tbs neutral oil evenly and sprinkle 1 tsp coarse salt; toss gently to coat. If using freshly fried chips, skip the oil step.

Bake chips in the preheated oven for 4–6 minutes just to warm and crisp; remove before they begin to brown. This prevents soggy chips once toppings are added.
Protein — Pollo Asado or Pork Chile Verde

Pollo Asado (if choosing pollo asado)
If you’re using pre-made pollo asado, shred about 3 cups and warm in a skillet over medium heat with 1 tbs oil for 2–3 minutes until heated through. If making quick pollo asado: marinate 1.5 lb boneless chicken thighs in a blend of 2 tbs orange juice, 1 tbs lime juice, 2 cloves minced garlic, 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp salt and 1/2 tsp black pepper for 30 minutes; grill or pan-sear 4–6 minutes per side until cooked, then rest 5 minutes and shred to yield ~3 cups.

Pork Chile Verde (if choosing pork chile verde)
If using prepared pork chile verde, shred and warm about 3 cups in a pot until simmering. To make a quick version: brown 1.5 lb pork shoulder cubed with 1 tbs oil, add 2 cups tomatillo salsa (or blended roasted tomatillos + jalapeño + onion + garlic), 1/2 cup chicken stock, 1 tsp cumin and simmer covered 45–60 minutes until very tender; shred to yield ~3 cups. Keep the pork slightly saucy but not swimming — drain off excess liquid before assembling so chips don’t get soggy.
Cheese & Melt

Scatter one-third of the chips in an even layer on the warmed baking sheet. Spoon half of the warmed protein evenly over the chips. Sprinkle one-third of the Oaxaca cheese (about 1 cup) and one-third optional Monterey Jack or cheddar if using. Add another even layer of chips (remaining chips), top with the remaining protein and the remaining cheeses.

Return the loaded tray to the oven and bake at 425°F (220°C) for 6–8 minutes, or until the cheese is fully melted and bubbling. For more controlled melt, you can broil on high for 1–2 minutes — watch closely to avoid burning.
Toppings

While the cheese melts, prepare the fresh toppings: thinly slice 2 jalapeños (remove seeds if desired), thinly slice 1 small red onion into half-moons, chop 0.25 cup cilantro, and have 1 cup pico de gallo and 4 lime wedges ready.

When the nachos come out of the oven, immediately scatter the sliced jalapeños and red onion over the hot cheese so they warm slightly. Spoon pico de gallo and pickled jalapeños (if using) over the top. Dot with 1/2 cup sour cream or crema (or serve on the side) and spoon 1 cup guacamole in a few places or serve on the side.

Serve immediately while cheese is hot and chips are crisp. Provide plates and extra napkins — nachos are best eaten hot and fresh.
