Prepare beans
Drain and rinse the canned black beans in a colander until water runs clear. Shake to remove excess water.

Season and mash
Add the rinsed black beans to the skillet along with 1 tsp ground cumin, 1 tsp chili powder, 1/2 tsp smoked paprika, 3/4 tsp kosher salt, and 1/4 tsp black pepper. Stir to combine and cook 2–3 minutes to let the spices bloom. Use a potato masher or the back of a spoon to roughly mash about half the beans in the skillet — leave the rest whole for texture.

Finish filling
Cook another 1–2 minutes until the mixture is heated through and slightly saucy. Remove from heat and stir in 1 tablespoon fresh lime juice and 2 tablespoons chopped cilantro. Taste and adjust seasoning with more salt or lime if needed. Keep warm.

Warm tortillas
Warm the flour tortillas so they are pliable: wrap them in a damp paper towel and microwave 20–30 seconds, or heat them individually in a dry skillet over medium for 10–15 seconds per side.

Assemble burritos
Lay one warm tortilla flat. Place about 1/4 cup warm cooked rice (if using) in the center, then spoon about 3/4 cup of the black bean mixture over the rice. Sprinkle about 3/8 cup (roughly 1/3–1/2 cup) shredded cheese over the beans. Add optional extras as desired: 1–2 tablespoons sour cream, 2 tablespoons salsa or pico de gallo, and slices of half an avocado or 2 tablespoons guacamole.

Fold burrito
Fold the sides of the tortilla in toward the center, then roll from the bottom up, keeping the filling snug, to form a tight burrito. Repeat with remaining tortillas and filling.

Pan-sear (optional, to crisp and melt cheese)
Heat 1 tablespoon butter or oil in a large skillet over medium heat. Place folded burrito seam-side down in the skillet and cook 2–3 minutes until golden and crisp. Flip and cook another 2–3 minutes on the other side until the tortilla is crisp and the cheese has melted. Work in batches if necessary. Alternatively, bake burritos at 375°F (190°C) on a parchment-lined sheet for 10–12 minutes, flipping halfway, until browned.

Transfer burritos to plates, slice in half if desired, and serve immediately with extra salsa, sour cream, cilantro, and lime wedges on the side.
