Make simple syrup

Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Heat over medium, stirring until the sugar fully dissolves and the mixture is clear, about 3–4 minutes. Do not boil vigorously. Remove from heat and cool to room temperature. Store in the refrigerator if not using immediately.

Prepare Flavoring

Berry syrup or muddled berries

If using berry syrup, measure 1/4 cup. If using fresh berries, place about 1/4 cup berries in a mixing glass, add 1 teaspoon of the simple syrup (or a pinch of sugar) and muddle gently until broken down but still slightly textured. Strain if you want a clear soda or leave pulp for texture.

Ginger or other flavors

If using grated fresh ginger, grate about 1 teaspoon into the mixer and briefly steep with 1 tablespoon warm water, then strain to capture the ginger flavor without large bits. If using vanilla, add 1/4 teaspoon directly to the syrup. For mint or cucumber, gently clap or bruise 6–8 mint leaves between your hands (to release oils) or lightly press 6 cucumber slices to release aroma.

Assemble Soda

Fill two tall glasses with ice (about 1 cup ice per glass). Divide the prepared flavoring (berry syrup or ginger infusion) evenly between the glasses — roughly 2 tablespoons each if using the 1/4 cup measure.

Add 1/4 cup (2 tablespoons) of simple syrup to each glass (total 1/2 cup for recipe). If you prefer less sweet, reduce to 1 tablespoon per glass or use a sugar-free sweetener to taste.

Add 1/2 tablespoon lemon juice and 1/2 tablespoon lime juice to each glass (split the 1 tablespoon of each across the two glasses) for brightness.

Pour 2 cups chilled carbonated water into each glass (total 4 cups). Pour slowly to preserve bubbles.

Stir gently once or twice with a long spoon to combine syrup and flavor without flattening the carbonation. Taste and adjust: add a splash more simple syrup if too tart, or more lemon/lime if too sweet.

Garnish each glass with a lemon wheel, a sprig of mint, and a few berries or a cucumber ribbon as desired.

Serve and Store

Serve immediately while fizzy. Leftover carbonated water can be kept chilled and used within 1–2 days. If you pre-mix soda with syrup, keep it refrigerated and consume within 24 hours; re-carbonation will be lost.
