Steak Bites
Prepare the steak
Pat the steak dry with paper towels. Trim any excess fat and cut across the grain into 1-inch cubes. Place the cubes in a bowl and season evenly with 0.5 tsp kosher salt, 0.25 tsp black pepper, and 0.25 tsp garlic powder (if using). Let sit at room temperature for 10 minutes while you make the chimichurri.
Sear the bites
Heat a large heavy skillet or cast-iron pan over medium-high heat until very hot. Add 1 tablespoon olive oil and swirl to coat. Working in a single layer (you may need two batches to avoid crowding), add the steak cubes in a single layer and let sear undisturbed for 1.5–2 minutes to form a crust. Toss or flip pieces and sear an additional 1–2 minutes for medium-rare to medium (adjust time if you prefer more done). Total cook time per batch ~3–4 minutes. Remove to a warm plate and tent loosely with foil. If you cooked in batches, return all pieces to the pan 30 seconds before serving to reheat and toss with any pan juices.
Finish
Taste and adjust seasoning with a pinch more salt and pepper if needed. Transfer steak bites to a serving platter and spoon chimichurri over them or serve chimichurri on the side for dipping.
Chimichurri Sauce
Prepare herbs and aromatics
Finely chop 0.5 cup parsley, 0.25 cup cilantro (if using), and 1 tablespoon oregano leaves. Mince 2 garlic cloves very finely or grate them on a microplane so they disperse through the sauce evenly.
Emulsify
In a medium bowl combine the chopped herbs, minced garlic, 1 tablespoon red wine vinegar, 0.5 tablespoon lemon juice, 0.25 tsp red pepper flakes, 0.5 tsp kosher salt, and 0.25 tsp freshly ground black pepper. Whisk in 3 tablespoons extra-virgin olive oil until combined. Taste and adjust: add more vinegar or lemon for brightness, more oil to mellow, or additional salt to taste.
Rest
Let chimichurri rest at room temperature for at least 10 minutes to allow flavors to meld. It can be made up to 24 hours ahead and refrigerated—bring back to room temp before serving.
