Limoncello Syrup & Liqueur

Method

Lemon Infusion

Prepare lemons

Wash 8 lemons thoroughly with warm water and a small amount of mild dish soap or a fruit wash to remove wax/residues. Rinse well and dry completely.

Zest carefully

Using a microplane or sharp vegetable peeler, remove only the yellow part of the lemon peel from all 8 lemons. Avoid the white pith (bitter). If using a peeler, trim any bits of pith with a paring knife. Collect approximately 80–100 g of zest in a clean, dry bowl or jar.

Place the lemon zest into a large, clean glass jar (at least 1 L) with an airtight lid.

Pour the 750 ml vodka over the zest, making sure the zest is fully submerged. Seal the jar tightly.

Store the jar in a cool, dark place for 7–14 days to macerate. Shake the jar gently once a day to help extraction. Check after day 7 for color: the vodka should turn bright yellow and smell strongly of lemon; longer infusion (up to 14 days) yields more intense aroma.

Syrup Preparation

When infusion is ready, prepare a simple syrup: in a medium saucepan combine 1000 ml water and 500 g granulated sugar.

Warm over medium heat, stirring constantly until sugar is fully dissolved. Do not boil vigorously; a gentle simmer for 2–3 minutes is enough. Remove from heat and allow syrup to cool to room temperature (about 30–45 minutes).

Strain the infused vodka through a fine-mesh strainer lined with cheesecloth (or a coffee filter) into a large bowl or pitcher to remove all zest and particulate. Press gently on the zest with the back of a spoon to extract remaining liquid, but avoid forcing bitter pith flavors out.

Add the cooled sugar syrup to the strained lemon-infused vodka and stir gently to combine. At this point the mixture should be bright yellow and sweetened to a typical limoncello strength (roughly 25–30% ABV depending on vodka).

Taste the liqueur once mixed. If you prefer brighter acidity, stir in up to 30 ml fresh lemon juice. If you prefer it sweeter, add up to 50 ml additional simple syrup, stir and re-taste.

Transfer the limoncello to sterilized bottles with airtight caps. Seal and refrigerate or freeze. Limoncello is best chilled before serving. Let rest at least 24 hours in the fridge to marry flavors; it will keep for several months refrigerated/frozen.

Serve

Chill small serving glasses in the freezer or with ice. Serve limoncello very cold (straight from refrigerator or freezer) in small chilled glasses (30–60 ml pours). Garnish with a thin lemon slice or a twisted lemon peel if desired.
