Prepare the Plantains

Peel the green plantains and cut them into 1-inch thick slices. Heat oil in a frying pan over medium heat and fry the plantain slices until golden brown on both sides. Remove from the pan and flatten each slice using a flat surface. Return them to the oil and fry again until crispy. Drain on paper towels and season with salt.

Cook the Chicken

In a bowl, mix the olive oil, garlic powder, paprika, salt, and black pepper. Coat the chicken breast with the mixture. Heat a grill or skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes before slicing.

Assemble the Sandwich

On a plate, place a layer of fried plantains as the base. Add lettuce leaves, sliced tomatoes, and avocado. Top with sliced chicken breast and a dollop of mayonnaise. Finish with another layer of plantains on top, if desired.

Serve the sandwich immediately while the plantains are still warm and crispy.
