Tortellini Preparation

    Make the Pasta Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Use your hands to mix the ingredients together until a dough starts to form.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 10 minutes until the dough is smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Filling

    Shred the braised short ribs and combine them with grated Parmesan cheese and black pepper in a bowl. Mix until well combined.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour as necessary to prevent sticking.

    Shape the Tortellini

    Cut the rolled dough into 3-inch squares. Place a small amount of filling in the center of each square. Fold the square to form a triangle and press the edges to seal. Bring the two corners of the triangle together and pinch to form the tortellini shape.
