Preparation of Salmon

Season the Salmon
Pat the Scottish salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.

Sear the Salmon
Add the salmon fillets to the skillet, skin-side down. Sear for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes until the salmon is cooked through.
Preparation of Puttanesca Puree

Blend the Sauce
In a blender or food processor, combine the puttanesca sauce and blend until smooth. If too thick, add a tablespoon of water to reach desired consistency.

Heat the Puree
Transfer the blended puttanesca sauce to a small saucepan over low heat to warm it through while you prepare the relish.
Preparation of Roasted Pepper & Olive Relish

Mix the Relish
In a medium bowl, combine the roasted red bell pepper and chopped green olives. Mix well to combine.
Plating

Plate the Dish
On each plate, spoon a generous amount of the warm puttanesca puree. Top with the seared salmon fillet. Add a spoonful of the roasted pepper and olive relish on the side, and garnish with caper berries.
