Form patties
Place the ground beef in a bowl. Sprinkle the kosher salt, black pepper, and Worcestershire sauce (if using) over the meat. Gently mix with your hands just until combined—do not overwork. Divide the meat into 2 equal portions (about 8 oz each) and form each into a patty roughly 3.5 to 4 inches in diameter and about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to help the patty cook flat.
Cook patties
Heat a heavy skillet (cast iron preferred) or grill over medium-high heat until hot. Add the oil or spread a bit of butter on the cooking surface. Place the patties on the hot surface and cook undisturbed for 3–4 minutes to develop a good sear. Flip and cook another 2–3 minutes for medium doneness. If adding cheese, place a slice on each patty in the last 1 minute of cooking and cover the pan or close the grill lid to melt the cheese. Cook to an internal temperature of 160°F (71°C) for well-done beef, or 145°F (63°C) for medium-rare/medium depending on preference and safety considerations.

Prepare vegetables
While the patties rest or cook, wash and dry the lettuce leaves. Slice the tomato into 1/4-inch rounds and slice the red onion into thin rings. If tomatoes are large, use 2–3 slices per burger.
Assemble burgers
Spread mayonnaise (or desired condiments) on the bottom bun. Place lettuce on the bun, then the cooked cheeseburger patty, tomato slices, onion rings, and pickle slices. Add mustard and ketchup to the top bun (or spread on the bottom/top as you prefer). Close the burger with the top bun and press gently to set.
Serving
Cut the assembled burgers in half if desired and serve immediately with fries, chips, or a simple side salad.
Leftover cooked patties can be refrigerated in an airtight container for up to 3 days; reheat gently to avoid drying out.
