Garlic Cheese Bread

Prepare oven and bread
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. Using a sharp serrated knife, slice the loaf in half lengthwise so you have two even halves.

Make garlic butter
In a small bowl, combine the softened butter, minced garlic (3 tbs), chopped parsley, grated Parmesan, olive oil, salt, black pepper and red pepper flakes (if using). Mix until smooth and evenly combined.

Bake
Place the assembled halves on the prepared baking sheet, cheese side up. Bake in the preheated oven for 10–12 minutes, until the cheese is melted and bubbly and the edges of the bread are lightly golden. For a browned, crisp top, switch the oven to broil on high and broil 1–2 minutes more—watch closely to prevent burning.

Finish and serve
Remove from oven and let rest 2 minutes. Using a sharp knife or pizza cutter, slice into 1–1.5 inch pieces. Optionally brush exposed crust with a little extra olive oil or melted butter for shine. Transfer to a serving platter and serve warm alongside the marinara sauce.
Marinara Sauce (for serving)

Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the diced onion and cook, stirring occasionally, until translucent, about 4–5 minutes.

Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown it.

Stir in the crushed tomatoes and tomato paste. Add the dried oregano, dried basil, sugar, salt and pepper. Bring the sauce to a gentle simmer, reduce heat to low, and simmer uncovered for 12–15 minutes to thicken slightly, stirring occasionally.

Taste and adjust seasoning (add a pinch more sugar if too acidic, or more salt/pepper as needed). If you prefer a smoother sauce, use an immersion blender for a few pulses once off heat.

Keep warm until serving alongside the garlic cheese bread.
